- 6-8 cups watermelon chunks
- ½ cup fresh lime juice
- sugar to taste I used about 2 tablespoons. You can also use honey if you prefer
- lime slices
- fresh mint leaves
- 1 quart sparkling water
Cut the watermelon into chunks and add it to a blender with the fresh lime juice and sugar. Blend until smooth.
If you prefer a smoother drink, strain the watermelon juice through a fine mesh sieve. I usually skip this step because I like using all of the fresh watermelon.
Fill each glass about halfway with the watermelon mixture. Add a few mint leaves, lime slices, and ice if you'd like.
Top with sparkling water, stir gently, and serve immediately.

- Taste the watermelon before adding sugar since some melons are naturally much sweeter than others.
