Quick and Easy Watermelon Mocktail

Equipment

  • blender or food processor

Ingredients

  • 6-8 cups watermelon chunks
  • ½ cup fresh lime juice
  • sugar to taste I used about 2 tablespoons. You can also use honey if you prefer
  • lime slices
  • fresh mint leaves
  • 1 quart sparkling water

Instructions

  • Cut the watermelon into chunks and add it to a blender with the fresh lime juice and sugar. Blend until smooth.
  • If you prefer a smoother drink, strain the watermelon juice through a fine mesh sieve. I usually skip this step because I like using all of the fresh watermelon.
  • Fill each glass about halfway with the watermelon mixture. Add a few mint leaves, lime slices, and ice if you'd like.
  • Top with sparkling water, stir gently, and serve immediately.

Notes

Recipe Tips

  • Taste the watermelon before adding sugar since some melons are naturally much sweeter than others.
  • Fresh lime juice gives the best flavor.
  • Wait to add the sparkling water until just before serving so it stays fizzy.
  • Chill the watermelon ahead of time for an extra-cold drink without needing as much ice.
