Ingredients

  • 3 cups einkorn flour
  • 1 tablespoon baking powder
  • ¾ teaspoon salt
  • 2 ¼ cups milk
  • 3 eggs separated
  • 8 tablespoons melted butter

Instructions

  • Plug in the waffle iron and get it heating. This way it is hot when the batter is done.
  • Mix the flour, baking powder, and salt in a small bowl and set it aside.
  • Separate the eggs and whip the egg whites to stiff peaks. Mix the egg yolks and milk until they are well blended.
  • Next, add the dry ingredients and mix until they are just combined. Don't overmix.
  • Then, add in the melted butter, again, only mixing to combine. Last, fold in the whipped egg whites.
  • Spray or butter your waffle iron and pour in the batter. The iron should be hot and ready to go.
  • Cook until the waffles are golden brown and crispy. Remove the waffle and continue cooking the rest of the batter.

Notes

How to freeze leftover waffles:
  1. Cool the Waffles: Allow the waffles to cool completely on a wire rack. This prevents them from becoming soggy during the freezing process.
  2. Freeze in a Single Layer on Parchment Paper: Place the cooled waffles in a single layer on parchment paper on a baking sheet. This initial freezing in a single layer helps prevent the waffles from sticking together.
  3. Separate with Parchment Paper: If you have multiple layers, place sheets of parchment paper between each layer to prevent sticking.
  4. Wrap in Plastic Wrap or Foil: Individually wrap each waffle in plastic wrap or aluminum foil. This additional layer helps protect the waffles from freezer burn.
  5. Place in a Freezer Bag or Container: Once wrapped, place the individually wrapped waffles in a freezer bag or airtight container. Remove as much air as possible to maintain freshness.
  6. Label and Date: Clearly label the bag or container with the date and type of waffles for easy identification later.
