Raspberry Mojito Mocktail

This is a beautiful and delicious drink that you will be proud to serve at your next get together or meal. It is also simple to make!!

Ingredients

  • 1 ½ cup fresh raspberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh lime juice and lime slices this is a variable, it will depend on how tart you like your drink. I used a lime slice cut in quarters in each drink. Then another slice for decoration.
  • 1 cup fresh mint leaves Reserve extra for decorations on top.
  • 1 quart sparkling water you might not use all of this, but it is better to have too much than not enough.

Instructions

  • Add your granulated sugar and fresh mint to a food processor. Pulse and break the mint up. Then pour the mint sugar and water into a small pan.
  • Cook over medium heat, stirring occasionally until the sugar is dissolved.
  • Strain out the mint and let the syrup cool. This is your mint simple syrup.
  • Add about ¼ cup of the berries to each cup, then smash gently. I took a slice of lime and cut it in quarters. Place these on top of the berries.
  • Next, add about ½, or more of ice to the drink. On top of this, add in 2-4 tablespoons mint syrup to each glass. This is a variable and will depend on your place preferences, Next, add in 3-4 tablespoons lime juice. Again, this will depend on what you like.
  • Pour your sparkling water over the drink and mix it in. Add a slice of lime to the side with a sprig of mint and fresh berries on top.

Notes

  • This is a simple drink, but let me share a few tips.
  • I used peppermint in my drink, but if you like, you can also use spearmint. There are a lot of varieties of mint and maybe you even have some growing your garden. Use whatever you like!
  • The mint simple syrup can easily be made up to a week ahead of time. If you plan to do this, strain the mint out, and store in an airtight container. I like to use mason jars for mine. Then when you are ready to go, you don't have the extra step of making the simple syrup.
  • Fresh raspberries are best. They are better for flavor and everything. If you cannot get any, or they are out of season, you can also use frozen. Make sure the berries are thawed first, then you can use them.
  • This drink is best served right away after you make them. Don't put them all together and leave them for hours before serving. Once they are combined, they are ready to go!
