Simple Blueberry Toast with Ricotta Recipe

Ingredients

  • 2 slices bread of choice
  • ½ cup ricotta
  • 2 cups blueberries
  • ½ cup chopped pistachios
  • ¼ cup honey
  • microgreens if using for topping

Instructions

  • Start by whipping the ricotta. Place it in a food processor or blender. Pulse it for 1-2 minutes until it is light and creamy. In a small bowl, add the blueberries and mash slightly. Some of the berries will be whole, which is what you are looking for. Mashing the berries slightly makes it easier to keep it on top of the toast without rolling off.
  • Once this is finished, the toast is ready to assemble. Toast the bread, top with the whipped ricotta, chopped pistachios, microgreens and drizzle with the honey. Serve the toast immediately.
