Simple Spring Pea Dip

This delicious and bright vegetable dip is simple to make , coming together in just a few minutes. Green pea dip is made with lots of seasonal vegetables. With its sweet and tangy flavor, its perfect for a springtime brunch.

Ingredients

  • 1 cup fresh peas You can also use frozen peas, just be sure to thaw them in cool water and drain first.
  • 2 tablespoons plain Greek yogurt
  • 3 tablespoons feta cheese reserve some for topping
  • 2 teaspoons parmesan cheese
  • 2 tablespoons olive oil
  • salt and pepper to taste.

Instructions

  • Blend all in the food processor. Add salt and pepper to taste. It is a sweet dip, so don't over-salt. A little is needed though.
  • Top with a little more feta.
  • I love to serve this on a crudite platter with plenty of veggies and a favorite whole grain bread or cracker and sharp cheddar.

Notes

Store green pea dip in an airtight container in the fridge for up to four days. 
Use fresh or frozen peas!! They are both nutritious options.
Pulse the food processor rather than puree. You want to leave it slightly chunky.
