Virgin Pina Colada Recipe

- 1 15 ounce cream of coconut
- 2-3 cups frozen pineapple I love using fresh pineapple that I can into chunks and freeze.
- 2 cups pineapple juice
- 1-2 cups ice
- toasted coconut for topping
Place all ingredients in the blender.
Blend until it is smooth.
Pour into your glasses and serve right away.
I love to top it with pineapple wedges and a drink umbrella.

- I froze fresh pineapple to freeze for this recipe. You can always buy it frozen if you like as well. It is easier and a time saver.
- As noted above, don't use coconut milk. I promise it is not the same as cream of coconut, or coconut cream. It is a little harder to find and a little more expensive, but well worth it.
- These are best served right away. They don't take long to make, so it is easy to throw them together at the last minute. However, the drink separates and just isn't as good if it isn't served quickly.
- I like to top with toasted coconut. Not only is the flavor really delicious, but it is also a beautiful topper!
