Add dry ingredients to a food processor and blend.

Add in wet ingredients, and pulse to combine.

Chill for an airtight container in the fridge.

Roll out the dough and cut into rectangles

With a fork, poke holes in the graham crackers. This will stop them from puffing up too much

Sprinkle with cinnamon-sugar mix and bake
