Baked Oatmeal for 1
If you are looking for a single-serving oatmeal recipe, this is the one for you! It is so simple to make and perfect for a quick breakfast.

- ½ cup regular oats
- ⅔ cup milk I used almond milk, but you can use whatever you like.
- ½ teaspoon baking powder
- pinch salt
- 1 tablespoon pure maple syrup or brown sugar
- ½ egg I mix the egg, then divide it in half. Don't throw the rest of it away! You can use it another day or use it to top salads, toast, etc.
- 1 tablespoon nut butter
- ½ teaspoon vanilla
Preheat the oven
Combine all ingredients in a small bowl. If you don't want oatmeal with whole oats, you can also do this in a food processor or blender. You will only need to pulse a few times to incorporate.
If you are mixing it by hand, be sure to blend it well.
Spray your baking dish with pan release or butter with softened butter.
Pour in the oatmeal mixture and bake for 10-15 minutes, depending on the baking dish you used.
Remove from the oven and it is ready to serve.
For each of these, start with the base recipe, then add the additional ingredients as noted below. It is fun to play around with all the different flavors.
- Apple cinnamon baked oatmeal- Add ¼ cup grated apples and ½ teaspoon cinnamon to the base recipe.
- Pumpkin pie- ¼ cup of pumpkin puree, use the whole egg, and ½ teaspoon pumpkin pie spice.
- Reeses- use peanut butter in the recipe and ¼ cup of chocolate chips.
- Banana bread- Add ¼ cup mashed bananas and 2 tablespoons of chopped walnuts.
