What is baked oatmeal?
If you are new to making baked oatmeal, let me give a few reasons to love it. Rather than cooking the oatmeal on a cooktop, it is baked in the oven, as the name implies.
One thing I love is with all the other foods you add in, it increases the protein in the oatmeal. Rather than having a carb-heavy breakfast, it is a more balanced one.
Baked oatmeal is really simple to make. It is mixed together in a large bowl (or small bowl in this case), then poured into your baking dish. The hands-on time is minimal. Throw it in the oven, get dressed and ready, then the oatmeal is ready to serve. In total, the recipe takes no more than 25-30 minutes from start to finish. It could not be easier. It is the perfect recipe for someone who is new to cooking and baking.
If you are looking for breakfast ideas to meal prep, add this to the list. This only makes breakfast for 1, but it still holds well.
It is made with simple ingredients. There is a really good chance you have all these ingredients in the fridge and pantry right now.
Ingredients
- Oats- I use old-fashioned oats (or regular oats). They hold up so much better to baking than quick-cooking oats or instant oats, which turn to mush. I do not recommend steel-cut oats for this baked oatmeal recipe as the cooking time is just not long enough to soften the oats all the way.
- Milk- I like to use almond milk in my oats or some other non-dairy milk. This is a personal preference and ANY type of milk will do.
- Nut butter- I like to use almond butter or peanut butter, but any other nut butter you like will work!
- Pure maple syrup- This is a great sweetener I prefer, however, it is expensive. If you want, you can always use brown sugar, granulated, coconut sugar, or honey also. There are plenty of options for sweetening.
- Egg- If you are vegan or don't want to use the egg, you can use a flax egg.
- Vanilla extract- It only takes a touch, but really enhances the flavor.
- Salt- same as the vanilla, while you only use a little, don't skip this!
- Baking powder- this will give your baked oatmeal a little lift.
- Optional add-ins- fresh fruit (fresh berries are my personal favorite, especially blueberries), chocolate chips, seeds, and nuts.
How to make baked oatmeal
Whisk your egg. I like to do this ahead of time to ensure there aren't scrambled eggs in my oatmeal. This recipe only calls for ½ the egg. I know, this is a weird amount, but save that other half for later. I scramble and add it to salads, wraps, etc.
Next, mix all ingredients in a small bowl and mix until everything is well blended. There is no need to mix the wet ingredients and dry ingredients separately. Simply mix them all together at the same time.
Add whatever you want to the oats now if you are adding anything additional.
Pour the oat mixture into your baking dish. I used a small pie pan for mine for individual portions.
The oatmeal will take about 10-20 minutes to bake, depending on what baking containers you have chosen to use. For the pie pans I used, it took 18 minutes, ramekins take the same. If you bake it in muffin pans, it filled 2 muffins and it took 12 minutes.
Baked oatmeal flavor options
For each of these, start with the base recipe, then add the additional ingredients as noted below. It is fun to play around with all the different flavors.
- Apple cinnamon baked oatmeal- Add ¼ cup grated apples and ½ teaspoon cinnamon to the base recipe.
- Pumpkin pie- ¼ cup of pumpkin puree, use the whole egg, and ½ teaspoon pumpkin pie spice.
- Reeses- use peanut butter in the recipe and ¼ cup of chocolate chips.
- Banana bread- Add ¼ cup mashed bananas and 2 tablespoons of chopped walnuts.
Best tips and tricks
- If you don't want to have the oatmeal texture, you can always pulse this a few times in the food processor or blender. This will give you a smoother texture, a little more like bread pudding.
- Be careful not to overbake. You want the center to be slightly soft after it is baked. This will give the oatmeal a nice cakey texture instead of a dry one. The best results come from this method of slightly undertaking the center.
- After the oatmeal is baked, you can top it with Greek yogurt and banana slices, fresh fruit, or other toppings to add more flavor. The Greek yogurt will also add extra protein.
- The baked oatmeal can hold for at least 3 days in the fridge.
- Reheat the oatmeal in the microwave as long as your container is microwave-safe.
- The recipe I use is a base recipe and is perfect for adding other flavors to it.
How to store for meal prep
This baked oatmeal is really easy to make for meal prep. Once the oatmeal is baked, simply let it cool to room temperature. Once it is cooled, cover it in plastic wrap then move it to the fridge. Do not leave it at room temp, but be sure to chill it for food safety. You can also move it to an airtight container if you don't want to store the baking dish in the fridge. It can also be baked in muffin pans or small ramekins.
It will hold in the fridge for 3-5 days, depending on what add-ins you have added to the oatmeal.

Equipment
- 1 small baking dish
Ingredients
- ½ cup regular oats
- ⅔ cup milk I used almond milk, but you can use whatever you like.
- ½ teaspoon baking powder
- pinch salt
- 1 tablespoon pure maple syrup or brown sugar
- ½ egg I mix the egg, then divide it in half. Don't throw the rest of it away! You can use it another day or use it to top salads, toast, etc.
- 1 tablespoon nut butter
- ½ teaspoon vanilla
Instructions
- Preheat the oven
- Combine all ingredients in a small bowl. If you don't want oatmeal with whole oats, you can also do this in a food processor or blender. You will only need to pulse a few times to incorporate.
- If you are mixing it by hand, be sure to blend it well.
- Spray your baking dish with pan release or butter with softened butter.
- Pour in the oatmeal mixture and bake for 10-15 minutes, depending on the baking dish you used.
- Remove from the oven and it is ready to serve.
