    Chocolate Baked Oatmeal Recipe

    Are you looking for a delicious indulgent breakfast idea? This rich, chocolate baked oatmeal recipe is just what you are looking for. It is creamy, chocolaty, and just what you need to get the day started.

    Take a look at this baked oatmeal recipe with chocolate chips. It is another fun breakfast option. Baked oatmeal recipes are simple, creamy, and a fun way to mix up the classic oatmeal cooked on the cooktop.

    What makes this recipe for baked oatmeal work?

    If you think of oatmeal as boring, this recipe will change your mind. It is a double chocolate oatmeal that packs punch you might not be expecting from a bowl of oatmeal. Take my word- you will like this indulgence.

    Baked oatmeal is incredibly easy to make. Even if you are new to the kitchen, baked oatmeal is perfect for the beginner. It is as simple as mixing everything together, baking, and serving.

    This is a great recipe for meal prep. This will make 3 servings, but double it and you have breakfast for the week. It will hold well in the fridge for up to 7 days.

    Ingredients

    This dish uses only standard ingredients, most of which you probably already have in your fridge and pantry.

    • Oats- Old-fashioned rolled oats are the best in my opinion. Quick-cooking oats will turn mush, but regular oats will hold their shape. Steel-cut oats take too long to cook, so I also do not recommend using them.
    • Cocoa powder- I love using Hershey's special dark powder as it gives a beautiful color and rich flavor. It can also be called cacao powder. This is an unsweetened cocoa powder, with no sugar.
    • Baking powder- this is used as a leavener that will give the baked oats a bit of a rise.
    • Salt- it only takes a pinch, but do not leave it out!
    • Milk- I like to use unsweetened vanilla almond milk, but any milk you like will do. If you are sticking with plant-based milk, and don't want almond milk, you can also use oat milk or coconut milk. If you prefer cow's milk or goat's milk, they will work just as well! The type of milk really isn't too important. Use your favorite.
    • Greek yogurt- I like to use this to add extra protein, but also to add more creaminess to the baked oatmeal.
    • Pure maple syrup- I love using this sweetener instead of refined sugar. It adds a sweetness that isn't too sweet.
    • Vanilla- This will help add a depth of flavor to the dish. With baking, you can always use vanilla extract, it is a cheaper option and works well with baking.
    • Egg- This will also add protein, but also acts as a binder as well. The egg is what will create a cake-like texture.
    • Chocolate chips- You can add anything from milk chocolate chips to dark chocolate chips. I prefer dark chocolate chips because they have a nice rich flavor.

    How to make

    This recipe is so simple to make, let me show you.

    Mix together- Start by mixing the egg up before adding it to the rest of the ingredients. This prevents chunks of egg yolk or white from cooking in the oat mixture. Once the eggs are mixed together in a small bowl, you can mix everything else altogether. Don't worry about separating the dry ingredients from the wet ingredients. Add them all together.

    Chocolate chips- Next, add half the chocolate chips to the oatmeal mixture. Prepare your baking dish by spraying it with cooking spray. Pour it into the baking dish. I used these cute little individual baking dishes I found on Amazon. Sprinkle the remaining chocolate chips over the top.

    Bake- Bake only until the oatmeal is just set. I like to keep these baked oats soft, not overbaked.

    Serve- These baked oats are fabulous warm. You can also let them cool slightly as well.

    Store- whatever you have left over, can also be stored in the fridge. Either wrap the dish tightly with plastic wrap or store it in an airtight container.

    Top tips

    • I like the whole oats in my dish, but if you aren't into this, there is another method you can use. Add all the ingredients to a food processor or high-speed blender. No need to separate the eggs with this technique. It will all be mixed together at high speeds. Don't overmix though. It will only take 5-10 pulses. Pour into the baking dish and top with the chocolate chips.
    • For extra added protein, you can mix in ¼-1/2 cups of nut butter. I have tried it with almond butter and loved it, but cashew butter would also be good.
    • You can either bake this in an 8x8 pan or individual single-serving dishes as I did. I like to bake mine this way as I make this recipe for meal prep.
    • I love fudgy chocolate-baked oatmeal. This can be accomplished by ensuring the center of the baked oats are soft and not overbaked.
    • While this is breakfast food, for a little extra indulgence, you can serve this as a dessert and top it with ice cream.

    Ingredients
      

    • ⅔ cup old-fashioned oats
    • 2 tablespoons cocoa powder
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • ¾ cup milk I like to use almond milk
    • ⅓ cup plain Greek yogurt
    • 2 tablespoons maple syrup
    • 1 teaspoon vanilla
    • 1 egg
    • ½ cup chocolate chips

    Instructions
     

    • Preheat the oven to 375 degrees.
    • This baked oatmeal can either be done in a 9x9 or 4, 8-ounce ramekins. Spray the baking containers and set them aside.
    • Mix together the egg. I like to mix it before adding it in with everything else. It helps the egg to blend better.
    • Next, add in all the ingredients together, holding back about ¼ cup of the chocolate chips. Pour the mixture into your baking pans. Sprinkle over the remaining chocolate chips.
    • If you choose to bake it in the 9x9 pans, it will take 15-20 minutes.
    • If you bake in the ramekins, mine took just a little over 10 minutes.
    • You can underbake just a touch for a more fudgy baked oatmeal. But, if you want it more firm, you can bake a few minutes longer.
    • Remove it from the oven. It is delicious served hot. Or you can let it cool, wrap it, and store it in the fridge for up to 1 week.

    Notes
