Equipment

  • Food processor or blender

Ingredients

  • ¾ cup fresh blueberries
  • cup Olive oil
  • 1 tablespoon White calsamic
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ½ teaspoon minced garlic

Instructions

  • Throw all ingredients in a small food processor or blender. Pulse until smooth.
  • Taste and adjust as needed. I like mine slightly sweet with a touch of salt. You might like it a little more sweet. If so, add more honey and blend again.
  • Store in the fridge for up to 2 days, mix as needed if it separates.

Notes

  • The freshness of the berries really matters in this recipe. How good your blueberries are will determine how good your dressing is. You don't want to use wrinkled and mushy berries. They should be firm, but not hard and have no mold.
  • I am fortunate enough to have several vinegar taprooms near me. They have a wide variety of vinegar to choose from. Most supermarkets will at least carry a basic white balsamic as well. If you cannot get anything local, let me recommend The Milled Olive, my local shop. They ship and have a great variety of vinegar.
  • This dressing is good for 2-3 days. It won't hold as long as other vinaigrettes since it has fresh fruit in it. Make sure and refrigerate if it is unused after 6 hours.
  • If the dressing separates, simply mix or whisk to get it to incorporate again.
