This Blueberry Dressing Recipe For Salad is a summer dressing. It is bursting with real blueberry flavor and is so easy to make. You will love it for topping all those wonderful salads you put together.
If you love to make homemade dressing, let me share a few others I have created. Balsamic Poppyseed is one we use all the time in our house. It is also simple and has the best flavor! Cherry Vinaigrette is another fresh fruit dressing that is perfect in the summer. Another really yummy dressing is this red wine vinaigrette.
Ingredients
- Blueberries- I really feel that fresh berries work best for this, but you can also use frozen. I will explain more in the note below.
- Olive oil- You can use other more neutral-flavored oils, but I really like olive oil in this dressing.
- White balsamic vinegar- You can also use dark balsamic, but white is my preferred in this recipe. If you like flavored balsamic, which I do, lemon and peach are really good in this recipe.
- Honey- You can use other sweeteners if you like- granulated sugar or maple syrup, but I like honey the best.
- Salt- it only takes a touch, but it is necessary
- Minced garlic- It might sound weird, but it is so good in this dressing!
How To Make
This dressing could not be any easier to make. Read below for the simple instructions.
- Add all ingredients to your food processor or blender. I like to use my Cuisinart mini food processor for this batch.
- Pulse until it is smooth and well blended.
- Taste and adjust as needed. You might like it a little sweeter, or you might need just a touch more salt. This will be a personal thing, which is why I include this step.
Salad Ideas
If you are looking for salad ideas to serve this dressing over, let me share a few I like. The first is the one you see in the photos, a spinach salad with nectarines, cucumbers, cheese, and nuts.
This also tastes really good over a spinach-strawberry salad. Or if you like peaches and nectarines, serve them over a salad that includes them.
If you want protein in your salad, add grilled chicken or shrimp to one of the salads listed above.
Notes
Even though this salad is really simple to make, let me share a few things that will make it the best it can be.
- The freshness of the berries really matters in this recipe. How good your blueberries are will determine how good your dressing is. You don't want to use wrinkled and mushy berries. They should be firm, but not hard and have no mold.
- I am fortunate enough to have several vinegar taprooms near me. They have a wide variety of vinegar to choose from. Most supermarkets will at least carry a basic white balsamic as well. If you cannot get anything local, let me recommend The Milled Olive, my local shop. They ship and have a great variety of vinegar.
- This dressing is good for 2-3 days. It won't hold as long as other vinaigrettes since it has fresh fruit in it. Make sure and refrigerate if it is unused after 6 hours.
- If the dressing separates, simply mix or whisk to get it to incorporate again.
