If you are looking for a recipe for Easy Homemade Coconut Clusters just like the ones from Costco, I have the recipe for you! This recipe can be made in under 30 minutes with only 5 ingredients. You will be surprised at just how simple this is!
Ingredients
- Unsweetened Coconut- I love to use the shaved coconut, but you can always use flaked if you prefer.
- Chia Seeds- These little gems are a must in the coconut clusters.
- Slice Almonds- You really can use any kind of nut here, but Costco uses sliced almonds and I love them!
- Pepitas- Pumpkin seeds.
- Honey- You can also use brown rice syrup if you prefer, but I always have honey on hand.
How To Make The Coconut Clusters
- Combine all your dry ingredients.
- Place honey in the microwave for about 30 seconds for easier mixing.
- Mix in salt and vanilla.
- Drizzle over dry ingredients and mix well.
- Pour onto a parchment-lined baking sheet.
- Bake until golden brown, turning once or twice.
- Remove from oven and allow it to cool.
- Break apart as needed.
Notes For Making Easy Homemade Coconut Clusters
- This will brown quickly, so make sure you keep an eye on it. Mine cooked in about 12 minutes, with me turning it.
- Don't try and rush this by turning the temp up on the oven. 325 really is the perfect temperature for baking these clusters.
- Shaved coconut is also called unsweetened coconut chips. It is a little trickier to find. I generally find it in the health food or natural section of my grocery store.
- Everything in this recipe is a variable. What I mean by this is you can adjust as it suits you. Want more nuts, add them. Not into chia seeds? Take those out.
- I like to store my clusters in the fridge in an airtight container. They hold really well for at least 3 weeks.
- Keep in mind if you live in a humid climate, this will probably get sticky again. If this happens, and you don't like it sticky, throw it in the oven again for a few minutes.

This are similar, although not as sweet, to the coconut clusters you can buy at Costco. They were also simple to throw together, so that's exciting!

Ingredients
- 3 cups unsweetened coconut
- ¼ cup chia seeds
- 1 ½ cup sliced almonds
- ¾ cup pepitas
- ½ cup honey brown rice syrup is what is listed on the bag from Costco, if you prefer this, use it!
- ½ teaspoon salt
- 1 teaspoon vanilla
Instructions
- Preheat oven to 325 degrees.
- Line baking sheet with parchment paper. This isn't necessary, but makes for easy cleanup.
- First, I should let you know that all ingredients in this recipe are variables. If you like one more than the other, add more. Or, if you would like to sub in other ingredients, you definitely should. Like if you prefer pecans to almonds, or sunflower seeds to pepitas. This is entirely up to you.
- Mix all dry ingredients together in medium bowl.
- Microwave the honey for about 30 seconds, this helps to loosen it even more for easier mixing.
- Mix the vanilla and salt in with the honey.
- Pour honey mixture over dry ingredients and mix well.
- Bake until golden brown stirring occasionally so everything gets browned. I turned mine twice. It took about 12 minutes for baking. Watch it close though, it bakes quickly.
- Pull from oven and let cool. Once it has cooled sufficiently, break into chunks. The size will depend on your preference.
- This is a great topping for yogurt, cottage cheese, ice cream, oatmeal, berries, etc. It is also great eaten on it's own if you prefer!
- Now, sit back and enjoy. You deserve it!
