Ingredients

  • 2 slices bread per sandwich
  • assorted vegetables I used cucumbers, green bell peppers, alfalfa sprouts, and lettuce
  • sliced provolone- I like the thick sliced

Black pepper aioli

  • ¼ cup mayo
  • 1 tablespoon plain greek yogurt
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon ground black pepper
  • salt to taste

Instructions

  • Thinly slice your vegetables for the sandwiches.
  • Make the black pepper aioli. Mix all ingredients, then salt to taste.
  • Put together the sandwiches. Toast the bread, spread the bread with aioli, top with the prepared green vegetables and enjoy!
