- 2 slices bread per sandwich
- assorted vegetables I used cucumbers, green bell peppers, alfalfa sprouts, and lettuce
- sliced provolone- I like the thick sliced
Black pepper aioli
- ¼ cup mayo
- 1 tablespoon plain greek yogurt
- 2 teaspoons fresh lemon juice
- 1 teaspoon minced garlic
- ½ teaspoon ground black pepper
- salt to taste
Thinly slice your vegetables for the sandwiches.
Make the black pepper aioli. Mix all ingredients, then salt to taste.
Put together the sandwiches. Toast the bread, spread the bread with aioli, top with the prepared green vegetables and enjoy!
