    Simple Green Goddess Sandwich

    Are you looking for a simple but healthy sandwich? This Green Goddess Sandwich on whole grain bread is for you. It is light and so healthy! The best meal on these hot summer days! It is loaded with tons of veggies, a slice of provolone and black pepper aioli slathered on the bread. I am telling you, this sandwich has it all!

    Bread Options For Simple Green Goddess Sandwich

    I baked my bread, but this time of year I purchase a lot more bread than I make myself. So, whichever way you prefer, go for it. If you are looking to bake your own, I have a few suggestions- this Oatmeal Bread is awesome.

    The veggies

    Once you have decided on bread, which is a really important part of the sandwich, let's get to the filling. I basically grabbed all the green veggies I had on hand and went for it.

    Avocados are always a must on our sandwiches.

    I think avocados for sandwiches are best a little harder. Otherwise, they are so mushy in sandwiches.

    Assembling The Simple Green Goddess Sandwich

    Cut yourself a thick slice of bread, or have it sliced thick at the bakery. I really think thick sandwich bread is the way to go! Of course we are carb lovers. If you are watching carbs or calories, go for the thin slice.

    Drizzle with plenty of aioli, it has such a great flavor you will want it.

    You can arrange your veggies in any way you prefer, but here is how I like mine.

    We always sprinkle the cucumbers and avocado with a little salt and pepper.

    Sprouts are so great and healthy, load it up!

    Greens of choice are great too, so load that up as well.

    Provolone isn't necessary, but certainly good.

    Next, top with another slice of bread slathered in aoil.

    I am going to honest here. I can easily eat 2 of these sandwiches!

    The simple to make spread is perfect for almost any hearty sandwich. It comes together with 3 ingredients and is put together in under 5 minutes.

    Ingredients
      

    • ½ cup mayo You can swap this out for nonfat plain Greek yogurt, it is so much healthier. The full fat version is much tastier though!
    • 1 tablespoon fresh squeezed lemon juice If you don't like a strong lemon flavor, go with 1-2 teaspoons to start
    • 1 teaspoon ground black pepper you can use more if you want!

    Instructions
     

    • Mix all ingredients until smooth.
      Serve on your favorite sandwich.
      Now, sit back and enjoy. You deserve it!
