Crunchy Mediterranean Cucumber Salad Recipe

Ingredients

  • 3 cups chopped or sliced cucumbers
  • 1 cup grape tomatoes cut in half
  • ½ cup sliced green olives
  • 1 cup chopped parsley
  • ¼ cup sliced shallots
  • 1 ½ cups garbanzo beans
  • ½ cup crumbled feta

White wine vinaigrette

  • cup olive oil
  • 3 tablespoons white wine vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoon honey
  • salt and pepper to taste
  • 2 teaspoons Herbs De Provence

Instructions

  • This salad could not be easier to make, the hardest part will be cutting vegetables. Cut them up and add the cucumbers, tomatoes, shallots, green olives, parsley, and garbanzo beans to a bowl. Mix the white wine vinaigrette ingredients in a small bowl or mason jar.
  • Pour over the ingredients and mix well to coat. Pour it into a serving bowl and top with the feta cheese. Sprinkle with salt and pepper and it is ready to serve.
