    Crunchy Mediterranean Cucumber Salad Recipe

    Crunchy Mediterranean Cucumber Salad Recipe is a refreshing and simple dish that comes together quickly. Loaded with crunchy cucumbers, juicy tomatoes, creamy feta, shallots, parsley, and garbanzo beans, it offers a great mix of textures and flavors. Drizzled with a tangy white wine vinaigrette, this salad is the perfect side dish for summer or even a light dinner.

    In our home, we eat a LOT of salads, Because of this, it is important to me to have a good variety of salad recipes. For this reason, there are so many delicious salad recipes on my blog for you to choose from.

    Ingredients

    • Cucumbers- my favorite cucumbers are the small Persian cucumbers from Trader Joes. They are small and so sweet, perfect for this salad. 
    • Tomatoes- another Trader Joe’s favorite- their San Marzano tomatoes have the best flavor.
    • Shallots- red onions can also be used. 
    • Garbanzo bean- I used canned beans, but you can also cook them yourself if you prefer. 
    • Feta cheese
    • White wine vinegar
    • Dijon mustard
    • Olive oil
    • Fresh parsley- you can use dried in a pinch, but fresh is best. 
    • Salt and pepper
    • Herbs de Provence- if you have never tried this spice blend, add it to your shopping list. I use this spice often on salads and other vegetables.

    How to make

    This salad could not be easier to make, the hardest part will be cutting vegetables. Cut them up and add the cucumbers, tomatoes, shallots, parsley, and garbanzo beans to a bowl. Mix the white wine vinaigrette ingredients in a small bowl or mason jar. 

    Pour over the ingredients and mix well to coat. Pour it into a serving bowl and top with the feta cheese. Sprinkle with salt and pepper and it is ready to serve.

    Ways to mix up this salad

    • Any type of cucumber can be used, but Persian cucumbers or mini English cucumbers are sweet and perfect for the flavors in this salad. 
    • I recommend feta, but creamy goat cheese or mozzarella pearls are so good too. 
    • If you want to add protein to the salad, grilled or rotisserie chicken is a good addition. Shrimp will add a great protein to this Mediterranean salad. 
    • Don’t like garbanzo beans? White beans could easily be swapped out.

    Ingredients
      

    • 3 cups chopped or sliced cucumbers
    • 1 cup grape tomatoes cut in half
    • ½ cup sliced green olives
    • 1 cup chopped parsley
    • ¼ cup sliced shallots
    • 1 ½ cups garbanzo beans
    • ½ cup crumbled feta

    White wine vinaigrette

    • ⅓ cup olive oil
    • 3 tablespoons white wine vinegar
    • 2 tablespoons dijon mustard
    • 2 tablespoon honey
    • salt and pepper to taste
    • 2 teaspoons Herbs De Provence

    Instructions
