Equipment

  • 1 large bowl
  • 1 medium bowl
  • 1 pie pan or 9x9 pan

Ingredients

  • 2 ½ cups regular oats
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons chia seeds
  • 2 cups almond milk or other milk of choice
  • 2 eggs
  • cup maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon almond extract
  • ½ cup sliced almonds
  • 1 ½ cup berries

Instructions

  • Preheat the oven to 375 degrees. Spray your baking dish with a pan spray brush with melted butter.
  • In a medium bowl, mix the oats, baking soda, salt, cinnamon, and chia seeds.
  • In a large bowl, mix together the milk, eggs, vanilla, and almond extract. Mix well.
  • Combine the wet and dry ingredients and mix until they are well blended. Add the blueberries and almonds and mix again.
  • Pour into our prepared pan and bake for 35 minutes.
  • Check. I like to bake until the center is almost set. Remove and it is ready to serve. If you are using it for meal prep, be sure to chill it before refrigerating it.

Notes

  • For added protein, add about ½ cup of nut butter. My family loves almond butter and peanut butter, but use whatever you like.
  • I prefer fresh fruit for this, but you can also use frozen berries. Just know it will take longer to bake if you do. I generally plan on adding 5-7 minutes to the baking time.
  • I baked mine in this round pie dish, but know you can also bake it in a 9x9 square baking dish.
  • Because there is the sweetness of the berries in the oatmeal, you don't need to use as much sweetener as you usually do.
  • When I am making this baked oatmeal for brunch or a get-together, I like to bake it in a pretty ceramic dish. Then I can serve it right in the baking dish.
  • While you might be tempted to sub in olive oil, I would not recommend it. I feel like it has too strong of a flavor.
  • If you are making baked oatmeal for meal prep, or just have leftovers, this will hold well in the fridge. Wait until the oatmeal is cooled to room temperature, then wrap it tightly with saran wrap or you can store it in a tightly sealed container. It will hold in the fridge for about 4 days.
  • Maybe you want to make oatmeal cups? You can easily bake this in a muffin tin. It will only take about 10 minutes to bake though.
