Turkey Meatballs Meal Prep

If you are looking for a simple recipe for your meal prep plan, you are going to love these delicious turkey meatballs! They are simple to make and totally delicious.

Ingredients

  • 3 pounds ground turkey, I like to use the 93/7 mix.
  • 1 cup grated parmesan This is optional, but adds a lot of flavor.
  • 1 cup finely chopped bell peppers
  • 2 cups chopped spinach
  • 4 eggs
  • 1 tablespoon salt
  • 2 tablespoons minced garlic
  • 1 teaspoon ground black pepper

Instructions

  • Preheat the oven to 425 degrees. Line a baking sheet with parchment paper and set it aside.
  • Next, combine all ingredients in a large bowl and mix well. Form into balls. Mine were about ¼ cup size.
  • Place them on the baking sheet with about an inch or 2 between each ball. Place in the preheated oven and bake for about 10 minutes. Then I like to turn the heat to broil and let them cook another 5-7 minutes. This will just add a little color to the tops of the meatballs.
  • Keep in mind, if you make smaller meatballs than I did, you will need to adjust that cooking time.
  • Remove from oven. Allow them to cool slightly before storing them in the fridge. They will stay good for up to 1 week.
  • I like to serve these with a salad, whole grains, or steamed veggies
