Healthy Carrot Salad
Nuts, seeds, dried fruit of choice
Apple cider vinegar
Pure maple syrup
I used a spiralizer, which is fun to use, but it isn't the only way. You can also grate the carrots, or even julienne. Smaller sizes are better.
Prep the carrots
Add in your nuts, seeds, dried, fruits and whatever else you want to add. I used sunflower seeds, pecans, and Craisins.
Now mix your maple vinaigrette. Remember this is pure maple syrup, I promise it make a difference.
Drizzle the salad generously with the maple vinaigrette.
Simple, healthy, and delicious!
