This simple-to-make hummus is the perfect summer appetizer. Light, healthy, and delicious!
Fresh lemon juice
salt and pepper
Cook your beets. I like to do this in my pressure cooker. You can also roast them.
When they are done, slice and add to your food processor or blender.
Add in your other ingredients.
Drizzle with more olive oil and top with chickpeas.
Serve with your favorite crackers, bread, or veggies.
This appetizer comes together quickly. It can even be made ahead of time, making serving a breeze! It is a light healthy app.
