Ingredients

Olive oil

salt and pepper

Cook your beets. I like to do this in my pressure cooker.

When they are done, slice and add to your food processor or blender.

Add in your other ingredients.

Blend well. 

4.

Drizzle with more olive oil and top with chickpeas.

Serve with your favorite crackers, bread, or veggies.
