    Fruit Salad with honey lime

    I love fruit salads, and feel excited every year when summer hits with so much variety in fruits. I generally eat just fruit, but lately have been mixing it up a bit with a really light dressing. So, here goes the Fruit Salad with Honey Lime.

    What fruits to use you ask? This is entirely up to you and your personal preference. I am always on the hunt for good, ripe fruit. On my grocery shopping trip this week I found, peaches, blackberries, blueberries, strawberries and kiwi. They were all so good!

    I cut my peaches in wedges, but you can also dice them if you prefer.

    It was still early in the season for peaches, but let me tell, these were so perfect!

    I cut the top off the strawberries and then quartered them. Cut your other fruits as you want.

    That's it! Throw all your washed and prepped fruits into bowl.

    Honey lime dressing

    Next up is the honey lime dressing. You will not believe how simple this is. Literally, honey and lime. That's it!

    When I want a good, strong citrus flavor, I always use the zest. To get the zest from the lime, start by washing. I like to wash mine with soap. I know not everyone does, but I think it is the best way to remove all the junk. My Microplane is a preferred method for me. It is so simple and quick.

    Next squeeze the lime for juice.

    Add your honey. Mix well. If your lime was cold and it is setting up the honey, just put it in the microwave for a few seconds, it should mix right up. Be mindful not to heat it up too much though. Just enough to be able to mix it in.

    Putting together the fruit salad with honey lime

    Here is the beautiful, finished salad. It is really easy to throw together and perfect for a light snack, dessert or even side dish.

    If you show up to the next get together with this, I am pretty sure everyone will love you.

    I also threw in some slice almonds. This isn't necessary, but it adds a nice crunch. We have also used pecans and those were great too.

    Drizzle all with the honey lime dressing. Lightly toss to coat, and serve immediately. Perfection!!

    The only downside to this salad is it isn't really a make ahead salad. I mean it will hold for a few hours at the most, but it really best if it is made fresh and consumed fresh. Which is fine with me!

    Ingredients
      

    • 2 teaspoons lime zest
    • 3 tablespoons lime juice
    • ¼ cup honey
    • 6 cups fruit salad

    Instructions
     

    • Combine all ingredients, mix well.
      Drizzle over your fruit salad. Toss lightly to coat.
      Now, sit back and enjoy. You deserve it!
