If you were to ask my husband what his favorite breakfast is, he will always include something with sausage and potatoes. This is where the inspiration for this Baked Sausage and Hash Brown Bites recipe comes from. While you can make these and serve them right away, I like to use them for meal prep. They reheat well and are perfect for weekend meal prep.

If you are looking for other breakfast recipes, I have plenty to offer. A recent one I updated were my hash brown and sausage egg cups.

    Ingredients

    • Ground Sausage- My go-to is always Jimmy Dean Hot Sausage.
    • Cream cheese- softened
    • All-purpose flour- I use this in place of Bisquick like you will see many recipes use.
    • Baking powder- again, as part of the substitution for Bisquick.
    • Garlic powder, black pepper, crushed red pepper, and salt- The sausage has plenty, but I like to add in a little extra.
    • Cheddar cheese- I like to use at least medium cheddar, but love sharp as well.
    • Egg- this is used as a binder in the recipe.
    • Frozen hash browns- You can make your own, but I think it is so much easier to buy them.
    • Onions- Yellow or white are the best in this recipe.

    How to make

For starters, I like to thaw my hash browns just slightly. It makes them so much easier to mix in. Next, mix together the flour, baking powder, salt, garlic salt, black pepper, and crushed red pepper in a small bowl.

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.

Combine all the ingredients and mix really well. You will want to ensure that everything is combined. Scoop into 2 tablespoon balls and line them on your baking sheet.

Bake for 22-25 minutes. The tops will be lightly golden brown and the balls cooked through.

I like to let them cool for about 5 minutes before serving. If you are not eating them right away, but using them for meal prep. Let them cool at room temperature. Once they are cooled, store them in an airtight container in the fridge for up to 5 days.

    Dipping ideas

    • Spicy Mustard: Adds a tangy kick that pairs well with the savory flavors.
    • Ranch Dressing: Creamy and herby, it complements the crispiness of the hash browns.
    • Cheese Sauce: Rich and indulgent, perfect for a cheesy, comforting touch.
    • Barbecue Sauce: Sweet and smoky, offering a nice contrast to the sausage.
    • Honey Mustard: Sweet and tangy, it adds a delightful balance to the dish.
    • Sour Cream with Chives: A classic pairing that enhances the flavor of the potatoes.
    • Sriracha Mayo: Spicy and creamy, ideal for those who like a bit of heat.
