This recipe brings another way to make fresh pasta with the Philips pasta extruder, now with eggs. My previous egg-free version is just as tasty, but this one adds a rich, silky texture. With an extruder, pasta-making is effortless—just pour in the ingredients, let the machine do its magic, and cut the pasta to your liking. There’s no need to hesitate—it’s an easy and rewarding process!

What is extruded pasta?
Extruded pasta is pasta that is made by forcing dough through a die using a pasta extruder, rather than being rolled and cut by hand or with a pasta machine. The process creates a variety of shapes that would be difficult to achieve with traditional rolling methods.
Ingredients
- Flour- I use tip 00 flour for this recipe, but you can also use all-purpose if you don’t want the extra expense. More info on this flour below and why you need to try it in your pasta.
- Eggs- this is a double recipe and uses 2 large eggs
- Water
How to make
As noted above, this is a double batch recipe. In my mind, it is always best to make a double even if you are not using it right away. It can be frozen and used later.
Measure the salt and flour in a bowl. In another mason jar or pitcher that came with the machine, add 2 eggs with enough water to bring it to 200 grams. Mix this eggs and water together.



Add the flour mixture to the machine and power the machine on. Set it for a double batch and let it begin mixing. Slowly pour in the liquid through the slits on the lid. The machine will mix and knead the dough.

Once the dough starts extruding, cut the pasta to the desired length. I typically like to cut my spaghetti, which is shown in the photos to 12-14 inches long.
What is tip 00 flour?
Tipo 00 flour is an Italian-style finely milled flour often used for making pasta and pizza dough. The “00” refers to the finest grind, meaning it has a powdery, soft texture compared to coarser flours like Tipo 0 or all-purpose flour.
It has a lower protein content than bread flour but still develops enough gluten for elasticity, making it ideal for delicate, smooth pasta and Neapolitan-style pizza crusts. Some versions of Tipo 00 have higher protein levels, specifically formulated for different types of dough.
