    Simple Banana Cream Icebox Cake Recipe

    Say hello to my Simple Banana Cream Icebox Cake Recipe! With only five ingredients and no need for an oven, this easy-to-make dessert features a creamy banana pudding mix that comes together effortlessly. It's perfect for those moments when you crave something sweet and simple. It is a 9x9 pan size.

    Ingredients

    • Banana cream pudding mix- this is instant pudding and you will need 2-3.4 ounce boxes. 
    • Milk- I like to use whole milk, but 2% or skim will work as well. 
    • Cool whip- Normally I like to whip my own heavy whipping cream, but cool whip is stabilized and so much easier to use in this recipe. 
    • Graham crackers- I use plain graham crackers in this recipe, but use can also use cinnamon. 
    • Fresh bananas- I used this on my layers in the cake and on top for decoration as well (optional)

    How to make

    Start by mixing together the milk and pudding mix for 1 minute. Let this sit for about 3-5 minutes to set just slightly. Fold in the cool whip.

    Once the filling is ready, it is time to start layering. Add a layer of graham crackers to the bottom of your pan. Spread over about ⅓ of the filling. Then another later of graham crackers and filling. I used 3 layers of graham crackers and 3 layers of the filling. On the last layer of graham crackers, I added a layer or sliced bananas before the filling. 

    Let this sit in the fridge for 1 hour, then spread 1 cup of cool whip over the top. Sprinkle with crushed graham crackers. Let this sit for another 1-2 hours to ensure the pudding is set. If you want, add a layer of sliced bananas over the top before serving.

    Top recommendations

    • You can easily make this simple banana cream icebox cake recipe the day before serving. If you are planning this, I would omit the bananas from the layers and the top. They will brown overnight and just aren’t as pretty. If you want to use bananas over the top, add them before serving. 
    • Whipping your own heavy cream is another option. It doesn’t set as firm as cool whip, but is still delicious. 
    • You can sprinkle in chopped walnuts to add crunch to this dessert as well.
    • If you like banana/cinnamon combo- which I do, you can also add in 2 teaspoons of ground cinnamon to the pudding mixture. The warm spices are so good in this dessert.
