While most people only think of einkorn when it comes to baking, which is true, it is so good to use that it also makes a wonderful porridge. Having cooked/baked with whole grains for a long time, I can easily say that einkorn is in my top list of grains I use regularly.
Ingredients

- Salt- It won’t take much, but it makes the porridge so much better.
- Milk- I add this in the last 10 minutes of cooking time for a creamier porridge.

How to make
This is cracked Einkorn porridge. I did this because I like the creamier texture and reduced cooking time. To crack this without special equipment, throw it in the food processor or blender. Pulse until it breaks into smaller pieces.
Heat the water and salt over high heat until it comes to a boil. Add the cracked einkorn and reduce the heat to low, cooking over a low boil until the einkorn is almost tender. Pour in the milk and continue to cook for another 10 minutes until the einkorn is tender and the porridge is thickened.
It is ready to serve. I topped mine with frozen blueberries, nuts, a touch of heavy cream, and plenty of pure maple syrup.



How to store the cooked einkorn porridge
Once it has cooked, allow the porridge to cool all the way. Store it in an airtight container and place it in the fridge. It will hold in the fridge for up to 1 week. When you are ready, heat in the microwave or cooktop. It will be very thick after coming out of the fridge, so add more milk or liquid to thin it as you heat it.
Where to buy einkorn
If you are one of the lucky ones, you will have a farm local to you with einkorn. If you are not, that’s okay; there are still a lot of options. Many health stores now carry einkorn berries or can order them for you.
My favorite fairly local farms for me are the Ancient Grains farm in Eastern Idaho and Bluebird Grain Farms in Washington. I have ordered from both many times and love their grains.
