    Cracked Einkorn Breakfast Porridge

    Cracked Einkorn Breakfast Porridge is a hearty way to start your day, combining the rustic charm of an ancient grain with modern convenience. As einkorn continues to gain popularity for its rich flavor and versatility, this porridge offers a simple, satisfying breakfast option. Its creamy texture and nutty taste make it a delicious meal, and the best part? You can prepare it ahead of time for a filling, ready-to-go breakfast throughout the week.

    While most people only think of einkorn when it comes to baking, which is true, it is so good to use that it also makes a wonderful porridge. If you are searching for more recipes using einkorn flour, I have many on the website. Having cooked/baked with whole grains for a long time, I can easily say that einkorn is in my top list of grains I use regularly. 

    Ingredients

    • Einkorn berries- I will share some of my favorite farms to buy einkorn at below. 
    • Salt- It won’t take much, but it makes the porridge so much better. 
    • Milk- I add this in the last 10 minutes of cooking time for a creamier porridge. 
    • Toppings- I will share many ideas of how to dress up this porridge below.

    How to make

    This is cracked Einkorn porridge. I did this because I like the creamier texture and reduced cooking time. To crack this without special equipment, throw it in the food processor or blender. Pulse until it breaks into smaller pieces. 

    Heat the water and salt over high heat until it comes to a boil. Add the cracked einkorn and reduce the heat to low, cooking over a low boil until the einkorn is almost tender. Pour in the milk and continue to cook for another 10 minutes until the einkorn is tender and the porridge is thickened. 

    It is ready to serve. I topped mine with frozen blueberries, nuts, a touch of heavy cream, and plenty of pure maple syrup.

    How to store the cooked einkorn porridge

    Once it has cooked, allow the porridge to cool all the way. Store it in an airtight container and place it in the fridge. It will hold in the fridge for up to 1 week. When you are ready, heat in the microwave or cooktop. It will be very thick after coming out of the fridge, so add more milk or liquid to thin it as you heat it. 

    Where to buy einkorn

    If you are one of the lucky ones, you will have a farm local to you with einkorn. If you are not, that’s okay; there are still a lot of options. Many health stores now carry einkorn berries or can order them for you. 

    My favorite fairly local farms for me are the Ancient Grains farm in Eastern Idaho and Bluebird Grain Farms in Washington. I have ordered from both many times and love their grains. 

    If all else fails, you can also buy einkorn on Amazon, in fact, Ancient Grains recently started offering their grains on Amazon as well.

    What is einkorn?

    Einkorn wheat is an ancient grain and one of the earliest forms of cultivated wheat, first domesticated over 10,000 years ago. It has a simpler genetic structure with fewer chromosomes than modern wheat, giving it distinct characteristics in baking and cooking. Known for its nutty, slightly sweet flavor, einkorn adds depth to recipes and is often used in bread, pasta, and pastries. Its golden color and slightly denser texture make it a unique choice for those seeking an alternative to modern wheat varieties.
