    Honey Mustard Vinaigrette {Stone Ground Mustard}

    This honey mustard vinaigrette made with stoneground mustard is my go-to dressing in Autumn and early winter. It pairs perfectly with any fall-themed salads with dark leafy greens and winter squash. It comes together quickly and has only 6 ingredients. Once you try this dressing, you will be hooked!

    Let me recommend a couple of salads to try this on. What about my kale and butternut squash salad? It is also really tasty on this kale and pearl barley salad as well.

    Tips for making this dressing

    • No need to use a whisk, you can easily make this in your favorite mason jar. Shaking it with the lid on is a very effective way to mix the dressing well.
    • Use a good quality extra virgin olive oil, the flavor and quality matter in this recipe.
    • I used honey in this recipe, but you can easily sub in pure maple syrup as well.
    • This recipe is made with stone ground mustard, not the same as Dijon or yellow mustard. It has a distinct flavor and texture you will love for this recipe.
    • Speaking of the mustard, I like it and use a lot of it in this recipe. If you want to reduce the amount of mustard, you can. Even a few teaspoons will give it a good flavor.
    • If you want it sweeter, add another 1-2 teaspoons of honey.

    Ingredients

    • Stone ground mustard- If you are new to stone ground mustard, I will share more about it below.
    • Extra virgin olive oil- use a good quality if you are able.
    • White wine vinegar- Red wine vinegar can also be used, but I prefer the white wine vinegar.
    • Honey- As noted above, you can also use pure maple syrup if you prefer.
    • Salt and pepper- I use kosher salt and freshly ground pepper.

    How to make

    Are you ready for this?? Add all ingredients to the mason jar or bowl you are using. Shake or mix it well. Taste and adjust the salt and pepper as needed. If you would like a sweeter dressing, you can also add another 1-2 teaspoons of honey.

    Once it is mixed, it is ready to serve. If it sits for a while before serving, whisk it again or give it a quick shake.

    Ingredients
      

    • ⅓ cup extra virgin olive oil
    • 2 tablespoons white wine vinegar
    • 2-3 tablespoons stoneground mustard I like to use at least 3 in my dressing
    • 1 tablespoon honey
    • ¼ teaspoon salt plus more as needed
    • dash ground black pepper

    Instructions
     

    • Add all ingredients to the mason jar or bowl you are using. Shake or mix it well. Taste and adjust the salt and pepper as needed. If you would like a sweeter dressing, you can also add another 1-2 teaspoons of honey.
