    How To Cook Spelt (Pressure Cooker)

    Let me show you just how to cook spelt (pressure cooker). In just a short time, you’ll have a versatile ingredient ready to use in various dishes, from salads to grain bowls. This method is perfect for meal prepping with whole grains, allowing you to prepare spelt ahead of time and use it throughout the week in different meals.

    What is spelt?

    Spelt (Triticum spelta) is an ancient grain and a species of wheat that has been cultivated for thousands of years. It is closely related to modern wheat but has distinct characteristics that set it apart. Spelt was widely grown in Europe during the Middle Ages and is experiencing a resurgence in popularity due to its nutty flavor and versatility.

    Where to buy spelt berries?

    There are plenty of places to buy spelt berries, thanks to the recent resurgence in interest in the ancient grain. Many areas in the US have it locally at co-ops or specialty stores, it is sold on Amazon, or if you want my recommendation, it is with a family-owned farm called Ancient Grains. It is a little expensive to ship, but well worth it to buy from a company I trust!

    How to cook spelt in a pressure cooker

    This is by far my favorite method as it pretty quick and so simple. The ratio is 1:3, 1 part spelt and 3 parts liquid. The liquid can be water or broth. Generally, I use water so the cooked spelt can be used for whatever I want to use it for without adding extra flavor. 

    Place the liquid, spelt, and salt in your pressure cooker of choice, I am using the Instant Pot. Seal the pressure cooker and set it to cook on high for 35 minutes. Once it the time is up, let it slow release for 10 minutes, then finish releasing the pressure. 

    There will still be a lot of liquid in the spelt. Drain it and the spelt is ready to use.

    How to use cooked spelt

    • Use in salads for added texture and nuttiness.
    • Stir into soups or stews for extra heartiness.
    • Top with vegetables, herbs, and a drizzle of olive oil for a quick, savory meal.
    • Mix into grain bowls with proteins like chicken, tofu, or beans.
    • Combine with roasted vegetables and a light dressing for a filling side dish.
    • Use as a base for cold grain salads with fruits, nuts, and cheese.
    • Blend into a breakfast porridge with milk, honey, and cinnamon.
    • Stir into casseroles for added bulk and nutrition.
    • Make a spelt pilaf by cooking with spices, onions, and broth.
