- Separate the egg yolks from the whites.
- Whip the egg whites to stiff peaks for added structure.
- Butter for Flavor:
- Use butter in the batter for enhanced flavor.
- Einkorn Flour for Nutty Taste:
- Choose einkorn flour for its nutty taste.
- Pinch of Salt:
- Add a pinch of salt to balance the flavors.
- Preheat the Waffle Iron:
- Ensure the waffle iron is properly preheated before cooking.
- Cooking Time Matters:
- Follow the recommended cooking time for perfect waffles. But also test for your specific waffle iron as they vary in temperatures.

Ingredients
- Einkorn Flour- I use whole grain einkorn flour, but you can also use all-purpose einkorn flour. They are interchangeable in this recipe.
- Baking powder and baking soda- They are both use as leaveners in this recipe to give the waffles the perfect rise.
- Salt- Don't leave this out, it is always use to enhance flavors.
- Milk- You can use cow's milk or plant-based milk. Either will work.
- Eggs- We are going to separate eggs, if you are new to this process, check out this post from Sugarland.
- Butter- This will be melted for the batter. If you are using salted butter, reduce the butter in the recipe by ¼ teaspoon.
How to make
Start by whisking together your dry ingredients in a small bowl and set it aside. Then, separate your eggs. The white will go into one bowl to be whisked and the yolks into a medium-size bowl.


Whip the egg whites to stiff peaks. In the medium bowl, add in the milk and whisk the yolks and milk until they are well blended. Stir in the dry ingredients, but do not overmix. Only mix until the flour is absorbed.



Next, add in the butter, again only mixing to combine. Last fold in the whipped egg whites.



Scoop the batter into your preheated waffle iron. Cook until the waffle is golden brown, then repeat the process until you have used all the batter.


If the waffles aren't being eaten as soon as they come out the waffle iron, as they do in my house, you can hold them in the oven on the lowest setting your have. My oven does a warm setting and that is what I hold mine at.

How to freeze waffles
One really cool thing about this recipe is the waffles are so easy to freeze. Then on busy morning, pop them in the toaster. Breakfast is ready to serve in minutes. Here is the process:
- Cool the Waffles: Allow the waffles to cool completely on a wire rack. This prevents them from becoming soggy during the freezing process.
- Freeze in a Single Layer on Parchment Paper: Place the cooled waffles in a single layer on parchment paper on a baking sheet. This initial freezing in a single layer helps prevent the waffles from sticking together.
- Separate with Parchment Paper: If you have multiple layers, place sheets of parchment paper between each layer to prevent sticking.
- Wrap in Plastic Wrap or Foil: Individually wrap each waffle in plastic wrap or aluminum foil. This additional layer helps protect the waffles from freezer burn.
- Place in a Freezer Bag or Container: Once wrapped, place the individually wrapped waffles in a freezer bag or airtight container. Remove as much air as possible to maintain freshness.
- Label and Date: Clearly label the bag or container with the date and type of waffles for easy identification later.
