There are two simple methods to making these baked oats without bananas. You can use the blender method or a regular mixing method with no equipment needed. In either case, it can be helpful first to collect all your ingredients, preheat the oven to 375 degrees F and prepare a 9x9-inch pan or 9-inch pie pan as I used, with cooking spray.
Blender method: This method will give you a smoother texture that you can adjust to your liking. It helps mix the oats and breaks them down a bit into smaller pieces. Blended baked oats result in lighter baked oatmeal because depending on how much you choose to process the oats. The more they're processed, the closer they become to oat flour which will give you a more cake-like result.
- Place all of the ingredients except the blackberries and the almonds into a blender or food processor. Pulse 5-6 times until all the ingredients are well combined.
- Scrape the mixture into the prepared baking pan and top with berries and nuts. Place into the oven and bake for 35 minutes until golden brown.
No equipment method: This method is more roughly textured. You simply add the ingredients to a large bowl and mix using a whisk. No special equipment is needed. This will result in dense baked oats with more defined pieces.
- In a medium bowl, mix the oats, baking soda, salt, cinnamon, and chia seeds.
- In a large bowl, whisk together the milk, eggs, vanilla, and almond extract.
- Combine the wet and dry ingredients. Fold in the blackberries and almonds.

Ingredients
- 2 ½ cups regular oats
- ½ teaspoon baking soda
- 1 ½ teaspoon cinnamon
- ½ teaspoon salt
- 2 teaspoons chia seeds
- 2 cups almond milk or other milk of choice
- 2 eggs
- 1 teaspoon vanilla
- ⅓ cup pure maple syrup
- ½ cup chopped or sliced nuts of choice
- 1 ½-2 cups blackberries
Instructions
- Preheat the oven to 375 degrees. Spray the pan with pan release or brush it with softened butter. Set the pan aside.
- Combine the oats, cinnamon, baking soda, salt, and chia seeds in a bowl.
- In another bowl, combine the eggs, milk, vanilla, and maple syrup. Mix really well so you don't wind up with scrambled eggs in the baked oatmeal.
- Mix together the dry and wet ingredients. Last, add the blackberries and nuts (I used almonds). Mix gently and pour this into your prepared pan.
- Bake for 30-35 minutes until the mixture is mostly set.
- Remove. You can serve this warm or cooled.
