Honey Ricotta Toast With Roasted Blackberries

Have you caught on to the ricotta toast trend yet? If you have, or haven't you have got to try my Honey Ricotta Toast With Roasted Blackberries. Not only is it very healthy, but also totally delicious!

What Makes This Ricotta Toast With Honey and Berries So Good?

This recipe is super simple to make and comes together in about 15 minutes. However, it looks super fancy, and is the perfect brunch food.

I love the flavor combination in this snack and so will you! The blend of ricotta, roasted berries, honey, mint, and microgreens are perfect together.

This toast is healthy! I used whole wheat bread, the roasted berries are healthy, and the drizzle of honey provides a better sweetener than sugar or other things.

Honey Ricotta Toast With Roasted Blackberries

Ingredients

  • Bread- I went with a whole wheat, but sourdough, multigrain, or even a white are also delicious. I like to make sure it is a hearty bread though, and will hold it's own.
  • Blackberries- Fresh is best!
  • Honey- I used it for roasting my berries, but also for topping the toast!
  • Ricotta- I used a low fat as I am cutting calories, but you can use whatever kind you prefer.
  • Mint leaves- I thinly sliced these and added them to toast.
  • Microgreens- These are optional, but let me tell you, they are REALLY good on the toast!

How To Make Ricotta Toast

  1. Place your blackberries on a baking sheet and drizzle with honey.
  2. Roast at 400 degrees.
  3. Toast your bread slices. I used my electric griddle, but you can use a toaster, or even broiler.
  4. Top your toasted bread with softened ricotta.
  5. Add your roasted blackberries, sliced mint, and microgreens if you are using them.
  6. Drizzle with more honey.
  7. That is it! How simple can it be??

Oven Roasted Blackberries

Oven-roasted berries are a great way to add a different flavor to your recipes. They add a depth of flavor to your recipes that wouldn't be there without the roast.

The caramelization of sugar adds the perfect amount of sweetness to this toast.

To roast the blackberries, start by placing the berries on a baking sheet. Then, drizzle with honey and mix gently.

Now, bake them at 400 degrees until they have released their juices and are softened.

Healthy Topping Ideas For Ricotta Toast

There are plenty of other great things to try with this delicious ricotta toast! You can add roasted berries, like these roasted plums or roasted cherries.

Another great topping is fresh fruit. Some of my favorites are peaches, nectarines, or other berries.

If you want to make this recipe even healthier, you can add microgreens or other healthy nuts or grains of choice.

Berries are the perfect summer fruit, but they have such great health benefits as well! Blackberries for example are full of fiber, vitamin C, and vitamin K.

Blackberries are known to help with digestion, managing both types of diabetes by helping with insulin resistance, and much more.

FAQ Ricotta Toast

Can I use something else besides ricotta?

Yes! You can also use cream cheese, Greek Yogurt, etc. If you are looking for dairy-free options, all of those have dairy-free options.

What other fruits can I roast?

Cherries, plums, and strawberries are my favorites. You can roast just about anything really!

Do you have savory topping recommendations?

Roasted tomatoes are my favorite!! Drizzle with a touch of olive oil and balsamic after topping the toast. You can also use fresh tomatoes if you prefer. Fried eggs are also really great on these toasts as well. Or roasted asparagus.

Equipment

  • baking sheet
  • toaster, electric griddle, or broiler

Ingredients
  

  • 4 slices bread of choice I used a whole wheat sourdough, but use what you like!
  • 1 cup ricotta, room temp I used lowfat, but use whatever type you like.
  • 3 cups blackberries fresh
  • 4-6 leaves fresh mint
  • ½ cup honey maybe more for drizzling
  • microgreens if using for topping

Instructions
 

  • Preheat oven to 400 degrees.
  • Spread blackberries over baking sheet and drizzle with about ¼ cup honey. I used parchment paper for easy cleanup.
  • Place in oven and roast for about 5-10 minutes. The berries will start to soften and the juices will run out.
  • While they are roasting, toast your toast.
  • I used an electric griddle and toasted it with a touch of butter. This isn't necessary , but I like it this way.
  • Thinly slice your mint too while it is toasting.
  • Once the blackberries are done and toast toasted, start assembling.
  • Spread each piece of bread with about ¼ cup ricotta.
  • Top with ¼ of the roasted blackberries, sliced mint, and microgreens if using.
  • Finish them off with a light drizzle of honey.
  • That is it! Done!
  • Now, sit back and enjoy. You deserve it.
