If you’ve never tried marinated feta, you’re in for a treat. This Greek-inspired appetizer takes creamy, salty feta cheese and infuses it with the flavors of olive oil, fresh herbs, and spices. It’s perfect for a mezze platter, a wine night with friends, or as a flavorful topping for salads and roasted vegetables. Best of all, it’s quick to make and tastes even better after a few days in the fridge as the flavors meld together.

Ingredients
- Olive oil- This is not cooked, so use the best quality olive oil you can afford.
- Feta- Same idea, choose a quality feta.
- Green Olives- Kalamata olives or black olives can also be used.
- Herbs of choice- I use Rosemary and Thyme. You can use other herbs, but I prefer heartier herbs that will hold up well in your olive oil as time goes on.
- Garlic and pepper- I use garlic cloves and pink peppercorns. Black or multi-colored peppercorns can also be used.

How to Make Greek Herb Marinated Feta
- Cut the feta – Slice the block of feta into ½- to 1-inch cubes or thick slices. Pat dry with a paper towel to remove excess brine.
- Combine – Place the feta in a clean glass jar or airtight container. Add in the fresh herbs (stuffed down the middle or sides), garlic cloves, and peppercorns. Pour the oil over all of it, making sure to submerge the cheese.
- Seal and refrigerate – Close the container and refrigerate to allow the flavors to infuse. Over time, the olive oil with set slightly and get cloudy, don't stress about this. Once it warms up, it will become liquid again.


Marinating Time
For the best flavor, let the feta marinate for at least 24 hours before serving. The flavor will continue to develop over 3–4 days.
Storage Tips
- Store in an airtight container in the refrigerator for up to 2 weeks.
- Always make sure the feta is covered completely with oil to help preserve freshness.
- Use a clean utensil when removing pieces to avoid introducing bacteria into the oil.
- Let the marinated feta sit at room temperature for 15–20 minutes before serving so the olive oil returns to a smooth consistency.

- Pair with crusty bread or pita for dipping.
- Add to Greek salads or grain bowls.
- Serve as part of a charcuterie or mezze board.
- Crumble over roasted vegetables or pasta dishes.

Greek Herb Marinated Feta Recipe
Equipment
- jar for storage and display, cutting board, knife
Ingredients
- 6 ounces block feta
- 1 cup whole green olives
- 2 springs fresh rosemary
- 2 sprigs fresh thyme
- ½ teaspoon crushed red pepper
- 1 teaspoon pink or black peppercorns
- 1 cup olive oil
- 2 cloves peeled and thinly sliced garlic
Instructions
- Cut feta into ½-1 inch chunks.
- Layer feta, olives, and herbs in jar. I like to arrange them in a pretty way.
- Pour olive oil over all.
- Place in fridge and allow it to marinate for24 hours up to 5 days.
- Serve as desired- charcuterie board, tapas, salads, main dish, etc.
- Remember not to discard your olive oil, it is fantastic to drizzle over salads or use for cooking.
