    Mediterranean White Bean Salad

    This crunchy and creamy Mediterranean White Bean Salad is the perfect salad for your next meal! It comes together in under 10 minutes and uses minimal ingredients. This is a recipe you will love and use over and over!

    If you are looking for another salad to pair with this one, how about my tasty strawberry and feta salad? It is one of my all-time favorite summer salads.

    What Makes This Salad So Good?

    The combination of flavors is something to love about this salad. The creamy beans, crisp veggies, and flavors are all perfect together.

    This salad could not be easier to make. I know it takes time to chop the veggies, but that is the hardest part. If you cut quickly, this salad will be done in 5-10 minutes!

    This is a great side dish, but could also be used as a light dinner as well.

    Ingredients

    • Cannellini Beans- these are white kidney beans and good in this salad. You can use any white bean you like though.
    • Cucumbers- what is a Mediterranean salad without them?
    • Tomatoes- They add beautiful color and delicious flavor.
    • Bell peppers- I used red, but you could also yellow or orange.
    • Artichoke hearts- I bought mine quartered, but you can cut them up if you like.
    • Olive oil- using for dressing the salad
    • Fresh lemon juice- this is also used for a simple dressing
    • Oregano- I like to use fresh, but when I made this, all I had was dry. Either work.
    • Minced garlic- it only takes about a teaspoon, but is well worth it.
    • Salt and pepper- these are to finish off the salad.

    How To Make

    Let me show you just how simple this salad is to make! Start by adding all the vegetables and beans to a bowl.

    Sprinkle with the oregano. Then drizzle with olive oil and fresh lemon juice. Sprinkle with salt and pepper (go light at first). Gently mix with a rubber spatula.

    Taste and add salt and pepper, or even more lemon juice as needed. That is it! The salad is ready to serve.

    Notes

    1. Make sure to drain your beans and rinse. The beans can be a little slimy if you don't, so this step is a must.
    2. If you don't have or can't find cannellini beans, you can always use the smaller great northern bean or even Butterbeans. The butterbeans are a larger bean, but if that is what you like, go for it!
    3. This salad holds well for about 3 days. The cucumbers and tomatoes will get a little soft by the 3rd day, but the salad still tastes really good!
    4. To change up this salad is no problem. You can always add in kalamata olives, green olives, or even black olives if you like.
    5. Parsley is another great herb to add to this salad. Chop it finely and add it in. Thyme and basil are also really good in this salad if you want to mix it up a bit.

    Ingredients
      

    • 2 15 ounce white bean
    • 2 cups sliced cucumbers
    • 1 cup sliced tomatoes
    • ¾ cups chopped bell peppers
    • ½ cup quartered artichoke hearts
    • ¼ cup fresh lemon juice
    • 2 tablespoons olive oil
    • 1 teaspoon minced garlic
    • 1 teaspoon fresh or dried oregano
    • salt and pepper start with 1 teaspoon salt, ½ teaspoon ground black pepper
    • ¾ cup crumbled feta mix ½ cup in, reserve ¼ cup to sprinkle on the top.

    Instructions
     

    • Combine all ingredients in a bowl. On the feta cheese, only add ½ cup, the ¼ cup will be sprinkled on top. With the salt, start with 1 teaspoon, and ½ teaspoon of black pepper.
    • Mix gently with a rubber spatula. Taste and add more lemon, salt, or pepper as needed.
    • Pour into your serving bowl and sprinkle with the remaining ¼ cup of feta cheese. That is it! You are done. Now, sit back and enjoy.
