    Puffed Kamut Oat And Peanut Butter Balls

    This recipe for Puffed Kamut Oat and Peanut Butter Balls is one you are going to want to make over and over. They are so simple to make and are the perfect sweet treat. If you have never used puffed kamut, you will be pleasantly surprised. It adds a delicious crunch that is the perfect contrast to the creamy peanut butter texture.

    If you wanted to try other snack bites, let me share a few others I have. These chocolate orange bites are a wonderful blend of 2 flavors we love. My sons favorite snack are these peanut butter oatmeal bites. If you want something with fruit, these raspberry almond and strawberry oatmeal bites are just what you need! Last are my personal favorite- chocolate coconut bites.

    Ingredients

    • Puffed kamut- I bought mine from Azure Standard, but you can also purchase it at most health food stores.
    • Peanut butter- Creamy peanut butter is what I used, but you can also use crunchy if you prefer.
    • Oats- I like to use regular oats, but if you prefer quick oats, you can use those as well.
    • Maple syrup- For the sweetener. You could also use agave nectar, honey or anything else you like. I prefer a liquid sweetener as opposed to granular.
    • Chia seeds
    • Vanilla- It only takes a little, but adds a depth of flavor.
    • Salt- Again, it is only a touch, but salt always enhances the flavors in foods.
    • Mini chocolate chips- These are optional, but we love the chocolate and peanut butter is one of our favorites.

    How to make

    You are going to love how easy this is! I like to soften my peanut butter just a touch in the microwave, it makes it so much easier to mix. When that is softened, gently mix everything together but the chocolate chips. Once it is well combined, add the mini chocolate chips and stir well again.

    When it is all mixed together, start forming the balls. I like to use a portion scoop so the balls are uniform. You can also use 2 spoons to form the balls too.

    PRO TIP: You can also form these into bars if you prefer. Line an 8x8 pan with parchment paper. Press the ingredients into the pan and let it chill for at least 2 hours to set the mixture. Once it is set, cut it and keep in the fridge.

    Place the balls on a parchment-lined baking sheet and chill in the fridge. Once the balls are set, you can store them in an airtight container in the fridge for up to 7 days!

    What is puffed kamut?

    Puffed kamut is a type of cereal product made from kamut, an ancient grain known for its nutritional benefits. Kamut is a trademarked name for Khorasan wheat, an ancient variety that has been cultivated for thousands of years. Puffed kamut is created through a process called puffing or popping, where the grains are subjected to heat and pressure, causing them to expand and form a light, airy texture.

    The process of making puffed kamut involves taking the whole kamut kernels and applying heat to them rapidly. The pressure causes the moisture inside the kernels to turn into steam, leading to the expansion and puffing of the grain. This results in a crunchy and airy texture, similar to other puffed cereals.

    Ingredients
      

    • 4 cups puffed kamut
    • 2 cups peanut butter
    • ¾ cup pure maple syrup
    • ¼ cups chia seeds
    • 1 cup oats
    • ½ teaspoon salt
    • 1 cup mini chocolate chips

    Instructions
     

    • Soften the peanut butter in the microwave for about 45 seconds.
    • Combine all the ingredients in a large bowl except the chocolate chips. Mix well until it is all combined with a rubber spatula.
    • Add in the chocolate chips and mix well again.
    • Form the balls and place them on a parchment-lined baking sheet. Chill in the fridge for about 1 hour. Then store them in an airtight container for up to one week.
