Simple Baked Breakfast Peaches is a great simple breakfast idea. I will be the first to admit breakfast is not my favorite meal of the day. Eating something is important, but not too heavy. I also don’t like to spend a lot of time preparing. These peaches cover all those.
A good ripe peach is the key to these simple baked breakfast peaches. You want them to be ripe, but overly ripe. I used a yellow fleshed peach for this recipe, but I also really like the white fleshed peaches as well. You can check for ripeness by pressing gently on the peach. It should have a little give, but not too much. Cut you peaches in half. remove the stone, if it is ripe, it should remove easily. Place on a baking sheet.
You can do the topping in a few ways. I like to do a butter/ brown sugar mix. You can also do just maple syrup, brown sugar and olive oil, or even a honey and butter. All are great options. With the brown sugar and butter I like to heat in the microwave to melt.
Next brush generously on the peaches.

Now, you only want to bake these until they are tender, they turn to mush pretty quick if you aren’t watching them.
Now, you can always eat these peaches just like they are when they come out of the oven. They are really good this way. You can also top them with a variety of toppings of choice. I like to do a good vanilla yogurt, Muesli and nuts of some sort. This time I used pecans.
One thing I like to do too is bake quite a few peaches. Whatever we don’t eat for breakfast I will put in the fridge, chill and reheat the next day.
